Hiromoto Knives Review
Hiromoto Knives
are made in Seki City, Japan. The knife that I own are the Aogami Super line and are forged from carbon steel. These knives are made of high Carbon steel with Chromium and Tungsten for added edge retention and durability. The hardness of the steel measures Rockwell 60-62. The result is an easy to sharpen knife that is durable and perfectly balanced and can hold a razor sharp edge.
I really enjoy using this knife. Japanese knives tend to be sharper but the edges are a little more delicate so you really need to be carefull when cutting things with bones in them.
