Ken Onion Chef's Knife Review
I recently purchased the
Ken Onion Chef's Knife
which overall is a super knife. The knife is unusual in that the handle is on top of the knife and the edge is curved so it takes a bit getting used to. You tend to rock the knife more on the cutting board and once used to it the knife makes quick work of chopping vegetables. The balance of the knife is good but a little blade heavy. Shun claims that the knife is made with a special steel and it has a Damascus pattern on the blade which looks like wood grain but with steel. I found the blade sliced effortlessly through everything I tried cutting and the blade stays sharp for a long time before I needed to steel it. The only downside is the cost which runs about $200.
