Shun Pro Knives Review
I recently purchased a set of Shun Pro knives and would like to share my conclusions about the knives. The Pro series features edges that are beveled on one side with a hollow groung back side. This is traditional Japanese beveling which makes the knives razor sharp right out of the box. I noticed right away that slicing meat or vegetables like potatoes was nearly effortless. The manufacturer claims a special mix of metals called  VG-10 "super steel" which is composed of Carbon, Chromium, Cobalt, Manganese, Molybdenum, Silicon, and Vanadium and has a Rockwell Hardness rating of 61. I have no idea how to verify this or even if it is good. I notice a lot of knife companies that try to differentiate their products in the market place by saying their steel is superior. My work with the knife suggestes that the quality of the steel is good. That is enough for me.

The handles of the Shun Pro are D shaped which took a little getting used to but I really like now. The handle is a little larger than traditional 3 rivet handles but since I am a big guy the handle fits in my hand very well. While the knife company (Kershaw) says that their knives are Dishwasher safe, I would not let these knives anywhere near a dishwasher. The hostile environment in a dishwasher will dull good knives more quickly than just about anything besides cutting on plates or glass.

Bottom line I highly recommend these knives for serious cooks.
